Baking post #2- petit fours

For me there’s something so satisfying about making things. I know and know of architects who like to make furniture. For me it’s baking.

These don’t get off to a very auspicious start, as the first couple of photos show, but end up looking pretty sharp.¬†They are a petit four version of a Gateau Clichy, the acknowledged progenitor of the Mocha Opera. In these I substituted black walnuts for almonds in the cake layers because I love their flavor with the coffee and chocolate. The sides of these could be glazed to keep them from drying out but I prefer to cut them at the last minute to maintain their striking appearance.
